Homebrewed Steak Sauce
 
Makes about 3 cups 

Ingredients: 

  • 1 1/2 cups Bavarian dark beer (or try Nat's Porter) 
  • 1/3 cup dry Sherry 
  • 1/4 cup honey (or try 1/4 cup dry malt extract) 
  • 1/3 cup malt vinegar 
  • 1/3 cup dark soy sauce 
  • 1/2 teaspoon liquid smoke (hickory or mesquite) 
  • 1/2 medium yellow or white onion chopped 
  • 4 large clove garlic, peeled 
  • 1/2 cup raisins 
  • 1/4 teaspoon hot red chili flakes (to taste) 
  • 1 tablespoon freshly zested orange peel 
  • 1/2 teaspoon each freshly ground black pepper and coriander seed
  • Procedure: 

    Combine all ingredients in a blender and puree until they are smooth. 

    Pour into a medium saucepan and bring to a slow simmer. Simmer for 20 minutes. Cool and refrigerate until needed. 

    This sauce can be used as a baste, marinade or a condiment. Enjoy!
